Pesto is one of my favorite things. And who doesn't love a good fried egg? So you know I was intrigued by the pesto egg recipe that went viral on TikTok. They. Are. Delicious.
The high-protein eggs have three simple ingredients: basil pesto (check out the health benefits of pesto), eggs (eggs are loaded with health benefits) and crushed red pepper flakes. Put the basil pesto into a hot pan, then crack the eggs over the pesto. Cook until the eggs are done the way you like them, then sprinkle with crushed red pepper flakes (or don't).
You can use store-bought pesto for this egg recipe, but if you have homemade pesto, use it. Fresh is always better. Serve the pesto eggs on toast, English muffins, bagels, hash browns, avocado toast or even on a burger. I'm thinking breakfast for dinner.
Cuisine: American / Italian
Prep Time: 2 minutes
Cook Time: 3 minutes
Total Time: 5 minutes
Servings: 2
Ingredients
- 2 - 3 tablespoons basil pesto
- 2 eggs
- crushed red pepper flakes, to taste
Here's how to make it:
- Put the pesto into a hot frying pan set over medium-high heat.
- When pesto starts to bubble, crack the eggs on top of the pesto. (You can use jarred pesto or make homemade basil pesto. Try this recipe with sundried tomato pesto.)
- Cook about 3 to 5 minutes or until eggs are cooked to your desired doneness. Sprinkle with crushed red pepper flakes. Serve as desired. (Don't like fried eggs? Scramble your eggs and then stir the pesto in. Yum.)
