Who doesn't love a two-ingredient recipe? I know I do! This easy cream cheese pancake recipe not only has just two simple ingredients, but is low carb and fits into your keto diet plan.
The two simple ingredients are cream cheese and eggs. That's it. After pulsing the two ingredients in a blender they are take a quick visit to a skillet. The pancakes are cooked for about two minutes on the first side and one minute on the second side, or until golden brown. Now the tender pancakes are ready for your plate and to be devoured. Stir some optional flavorings into the batter for even more flavor (see Recipe Notes). My family likes vanilla extract and ground cinnamon.
Enjoy these low-carb pancakes as-is for a quick snack, or add a dusting of powdered sugar and fresh fruit for a sit-down breakfast, brunch or even dessert. And don't forget you also get the health benefits of eggs with each bite!

- 4 ounces cream cheese
- 4 eggs
Recipe Notes
- Want more flavor? Add some vanilla extract (or your favorite baking extract), ground cinnamon, pumpkin pie spice, apple pie spice or dust the top with powdered sugar or cinnamon-sugar.
- Fresh fruit loves these simple pancakes! Top them with strawberries, raspberries, blueberries, blackberries, peaches or even fried apples.
- Make the pancakes ahead and reheat in the microwave.
Here's how to make it:
- Put the eggs and cream cheese into a blender. (If you want to add vanilla or cinnamon, add it now.) Blend until smooth.
- Heat a small skillet over medium-high heat. Melt a little butter in the skillet. Add about 2 tablespoons of the pancake batter. Cook for about 2 minutes on the first side or until golden. Flip the pancake over and cook about 1 minute. Remove to a plate and repeat with remaining batter.
