Shopska salad is a salad recipe popular in Southeastern Europe. The salad has three healthy, wholesome ingredients, and the colors represent the Bulgarian flag. It is Bulgaria's most famous recipe!
To make this Bulgarian shopska salad recipe you will need three simple ingredients for the basic recipe (aka authentic): a fresh tomato (check out all the health benefits of tomato), a fresh cucumber (read about the health benefits of cucumber) and sirene cheese.
Never heard of sirene cheese? According to Cheese.com, "Sirene is a feta-style brined cheese made in South-Eastern Europe, particularly popular in Croatia, Serbia, Bulgaria, Romania, Albania, the Republic of Macedonia, Greece and also in Israel. It is also known as 'white brine sirene' or Bulgarian Feta. Sirene is made from goat’s, cow’s or sheep’s milk or a combination of different kinds of milk."
A fun way to serve this salad recipe is to make the basic salad then set out the optional ingredients so everyone can make it how they'd like. If you want to make it a meal, add some diced salami, prosciutto or ham. Because there's only three main players, use the freshest produce you can find. If you can't find sirene cheese, use feta.

Ingredients
Salad
- 1 large tomato, chopped
- 1 cucumber, chopped
- 3 1/2 ounces sirene cheese (can substitute feta)
Optional Ingredients
- chopped red bell pepper
- fresh parsley
- balsamic vinegar, white wine vinegar or red wine vinegar
- olive oil
- salt and pepper
Here's how to make it:
- Put the tomato and cucumber into a salad bowl. Toss.
- If using the optional ingredients, add them here, to taste.
- Grate the cheese over the top until well covered. Serve immediately or refrigerate to chill.
