When I was in California, I had the most amazing beets for lunch – and this got me on a beet kick! While I grew up eating beets from a jar, cooking them fresh is another thing entirely. But if you cook beets in your air fryer, you can enjoy these earthy vegetables and get the health benefits of beets easily.
This easy air fryer beets recipe is so simple to prepare and cook. With just salt and pepper, the flavor of the beet shines. The beets are tossed in olive oil, seasoned with salt and pepper, and then cooked in the air fryer for about 18 minutes until tender. These low-calorie beets are amazing with almost anything.
Serve the beets as a snack (just pop them in your mouth!), as a side dish with your favorite protein or toss them into a salad. Don't forget that olive oil has health benefits, too!

Ingredients
- 3 - 4 medium to large beets, peeled and cut into chunks or wedges
- 1 tablespoon olive oil
Here's how to make it:
- Put the beets into a bowl. Add the olive oil. Season with salt and pepper. Toss to coat. You could add your favorite seasoning, too, if desired.
- Pour the beets in a single layer onto an air fryer tray or into an air fryer basket.
- Cook at 380 degrees F for about 18 minutes. (You may have to do more than one batch.) To cook in the oven, bake at 400 degrees F for about 40 minutes. Store the beets in an airtight container in the fridge.
