Some dessert recipes remind you of your childhood – and some desserts are your childhood. My grandma made this easy, creamy Jell-O pie recipe all the time during the warmer months (in Texas, that's pretty much year-round). I remember opening her fridge up when we got there to see if she made this creamy dessert – and in what flavor.
Most of the time it was cherry, which was my all-time favorite. You can use any flavor gelatin, but for me, cherry is the only way to go. My grandma would occasionally try a new flavor like strawberry-banana, raspberry or lime. It was good, but I always wished it was cherry after finishing my bowl.
To make this Jell-O recipe you only need six simple ingredients (and one of them is water!): a box of gelatin, granulated sugar, boiling water, lemon juice, a can of evaporated milk and a box of vanilla wafers. The dessert is assembled and in the fridge in about 15 minutes. Quick and easy!

Ingredients
- 3 ounces (1 small box) Jell-O gelatin, any flavor
- 1/2 cup granulated sugar
- 1/2 cup boiling water
- 2 tablespoons lemon juice
- 12 ounces (1 can) evaporated milk, chilled
- 15 ounces (1 box) vanilla wafers
Here's how to make it:
- Dissolve the gelatin and sugar in the boiling water. Add the lemon juice. Fresh is best, so squeeze your own lemon juice if you can. Use any flavor gelatin.
- Whip the evaporated milk until stiff.
- While whipping, slowly pour in the gelatin mixture until well combined.
- Put the vanilla wafers into a rectangular baking dish.
- Pour the gelatin mixture over the vanilla wafers.
- Top with crumbled vanilla wafers.
- Refrigerate until ready to serve. Store the dessert covered in the fridge.
