Quick & Healthy Chicken Piccata Recipe: This Instant Pot™ Chicken Recipe Is Deliziosa by Sarah Amona

Chicken piccata is a classic Italian recipe with chicken, capers and a lemony pan sauce. This easy chicken piccata recipe is made in the Instant Pot™, so it's ready in about 20 minutes. It's delicious!
Serve this easy, healthy chicken recipe with mashed potatoes, pasta or rice to soak up the flavorful sauce. The leftovers reheat beautifully.

Ingredients
- 4 teaspoons olive oil
- 2 1/4 pounds chicken breast
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup chicken stock
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 cup capers
Here's how to make it:
- Heat Instant Pot™ to "sauté" and add oil. Salt and pepper both sides of the chicken and add to hot pot. Brown chicken for about 4 minutes on each side and then remove to a plate.
- Add broth, lemon juice, oregano and basil and scrape any brown bits off the bottom of the pot. Return chicken to Instant Pot™ and sprinkle capers on top. Put cover on (make sure vent is turned to “seal”). Set Instant Pot™ to "manual" for 10 minutes.
- Once done, quick release the pressure. Use an instant read thermometer and ensure chicken has an internal temperature of 165 degrees F. Serve chicken with sauce in pan and lemon wedges.
