Creamy Roasted Garlic & Lemon Salad Dressing Recipe Is Heavenly

Here it is, your new favorite salad dressing. This easy roasted garlic and lemon salad dressing recipe is not shy on flavor. With sweet roasted garlic and tart lemon, it adds so much deliciousness to whatever it touches.

Start by roasting garlic. This is a simple process! Cut the top off of a whole head of garlic, put it onto a square of aluminum foil, drizzle with oil oil, wrap it up and bake for about 45 minutes. The silky soft garlic pulp is mashed into a paste. The roasted garlic paste is whisked together with the buttermilk, olive oil, Dijon mustard, honey, lemon zest and lemon juice to create the flavor-packed, creamy salad dressing. So simple and easy!

Drizzle this lemon salad dressing recipe on salads, pasta salads, chicken breast, shrimp, fish or use it as a dipping sauce. You'll always want a jar waiting in the fridge, so double the recipe. You could even share it with friends and family (don't forget to print out a copy of the recipe).

  • 1/2 cup buttermilk
  • 1/4 cup olive oil
  • 2 - 3 teaspoons Dijon mustard (or to taste)
  • 1 teaspoon honey
  • 1 teaspoon grated lemon zest
  • 2 - 3 tablespoons lemon juice

  • Fresh is always best when it comes to lemon juice. But in a pinch, you could use bottled lemon juice.
  • Make some extra roasted garlic to use in other recipes.
  • Store the salad dressing in a salad dressing cruet, mason jar or airtight container. 

Here's how to make it: 

  1. Cut the top off the head of garlic and place it in on a square of aluminum foil. Drizzle with the olive oil. Wrap the foil around the garlic and bake in a preheated 400-degree F oven for about 40 to 45 minutes. Remove from the oven and cool slightly, then squeeze the flesh from the skin into a mixing bowl. Smash to create a garlic paste. 
  2. Add the remaining ingredients to the garlic paste. Season with salt and pepper. Whisk until combined. (You could puree in a blender.) Store in the refrigerator until ready to use.
