When my husband and I get serious about losing a few pounds, the chicken breast flies in my kitchen (not literally!). Chicken breast for dinner can get boring if you don't change things up sometimes. This easy harissa chicken breast recipe is just three simple ingredients that combine to make a juicy, slightly spicy, quick dinner. It's my new favorite way to cook chicken breast.
Here is your shopping list for this juicy skillet chicken recipe: olive oil, chicken breast and harissa. The harissa cooks down into the olive oil and chicken drippings to create a fabulous pan sauce that I drizzled over quinoa. Loved. It. Next time I will add a little more olive oil and harissa so there's more of it for drizzling.
Harissa is a spicy chili paste or dry spice blend that originated in Tunisia, North Africa. Harissa is smoky, garlicy, peppery and citrusy. It's definitely a spice you need to try! For this recipe I used the harissa paste.
This tasty chicken is a great way to add more protein to your diet. Serve the high-protein chicken breast for dinner with your favorite side dishes.
Cuisine: African / American
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 1
Ingredients
- olive oil
- 1 chicken breast
- 1 - 3 teaspoons harissa, or to taste (I used Trader Joe’s Traditional Tunisian Harissa)
Here's how to make it:
- Heat a little olive oil in a skillet. Season the chicken breast with salt and pepper. Put the chicken into the hot pan and cook until golden brown on both sides and almost cooked through, about 6 to 10 minutes depending on thickness of chicken. You could use boneless chicken thighs instead of breasts.
- Spoon about 1 tablespoon of harissa paste onto the top side of the chicken breast (use however much you want). Spread it to cover the whole breast. Cook about 1 minute. Flip the chicken over and coat the other side with harissa. Cook until it melts and cooks onto the chicken, about 1 more minute. Store any leftover chicken in an airtight container in the fridge.
