Cuisine: American
Prep Time: 10  minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Servings: 6

  • 12 slices brioche bread (or your favorite bread)
  • 6 tablespoons butter

  • 6 tablespoons butter
  • 1/2 cup packed brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup rum
  • 2 firm bananas, peeled and sliced

Here's how to make it:

  1. To make the custard, combine all the ingredients in a shallow dish.
  2. To make the topping, melt the butter in a skillet. Add the brown sugar and maple syrup. Cook until sugar has melted and it thickens, about 4 to 5 minutes. Stir in the bananas. Remove from the heat and add the rum. Return to the heat and cook, stirring, about 3 minutes.
  3. Melt 1 tablespoon of the butter in a skillet. Dip the bread, two slices at a time, into the custard. Remove and let the excess drip back into the bowl. Cook the bread for about 2 to 3 minutes per side or until golden brown. Repeat with the remaining bread, adding more butter each time.
  4. To serve, spoon the banana topping over the hot French toast.
