To make this banana cake recipe you only need basic ingredients from your fridge and pantry. Here is your short shopping list for the moist cake recipe: bananas (check out the health benefits of bananas), butter, brown sugar, ground cinnamon, pecans, flour (all-purpose or gluten-free flour), baking powder, vegetable oil, granulated sugar, vanilla extract, an egg and buttermilk.
A sweet yellow cake batter (buttermilk makes it so moist!) is poured over caramelized bananas and crunchy nuts. Bake then flip it over for a show-stopping banana dessert.

Ingredients
Bananas
- 4 tablespoons butter
- 1/3 cup brown sugar
- 1/4 teaspoon cinnamon
- 4 bananas, sliced in half lengthwise
- 1/4 cup chopped pecans
Cake
- 1 1/2 cups flour (all-purpose or gluten-free flour)
- 2 teaspoons baking powder
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 teaspoons vanilla
- 1 egg
- 1 egg yolk
- 1 cup buttermilk, at room temperature
Here's how to make it:
- For the bananas, melt the butter in a skillet. Add the brown sugar and cinnamon. Cook until the sugar melts. Pour the mixture into a round cake pan. Lay the bananas on top of the melted sugar. Sprinkle with the pecans.
- For the cake, combine the flour, baking powder and salt in a bowl. In another bowl, combine the oil, sugar, vanilla, egg, egg yolk and buttermilk. Stir well. Add the dry ingredients to the wet ingredients until just combined. Pour the batter over the bananas. (For a gluten-free cake, use gluten-free flour.)
- Bake in a preheated 350-degree F oven for about 35 to 40 minutes.
- Remove the cake from the oven and run a butter knife around the edges. Carefully invert onto a plate. Leave the pan on for a few minutes before lifting it off. Serve warm. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
