My husband won't eat fish for dinner. So being a fish lover, I'm always look for easy ways to prepare one seafood fillet. This baked steelhead trout recipe is super simple to make, and so delicious. This baked fish recipe can be made for just one in a ramekin or for more in a baking dish.
To make this high-protein recipe you will need just four simple ingredients and salt and pepper. Here is what to grab from your fridge and pantry: a steelhead trout fillet, olive oil, dried parsley flakes and a lemon for slicing. I used parsley flakes because I wanted the flavor of the fish to shine, but you could use dill, Italian seasoning, basil, oregano or your favorite spice blend. If you can't find steelhead trout, salmon works just as well.
Serve this moist baked fish for lunch or dinner with your favorite side dishes. I served mine with roasted balsamic fennel and carrots.

Ingredients
- 1 steelhead trout fillet, about 6 ounces (you could use salmon)
- olive oil
- parsley flakes (or your favorite dried herbs)
- lemon slices
Here's how to make it:
- Oil the bottom of an individual casserole dish (ramekin). Put a piece of fish into each dish. Sprinkle with salt and pepper to taste. If baking more than one fillet, put the fish into a baking dish.
- Put a lemon slice on top of each fillet. You could also use limes or oranges.
- Sprinkle with the dried parsley and drizzle with olive oil.
- Bake in a preheated 425-degree F oven until cooked through, about 7 to 10 minutes depending on thickness of fish. Mine was cooked perfectly at 8 minutes.
- Serve from the casserole dish or use a spatula to remove to a plate.
