Ingredients
- 4 cups cubed potatoes
- 4 carrots, coarsely shredded
- 2 tablespoons olive oil
- 1/4 cup low-fat milk
- 1 teaspoon ground smoked paprika
Here's how to make it:
- Boil the potatoes and carrots in salted water until tender, about 15 minutes. Drain.
- Add the olive oil, milk and paprika. Mash until desired smoothness with a potato masher. Season with salt and pepper, to taste.
