Cheese-Crusted Lemon Ranch Chicken Breasts Recipe With Garlic Panko Topping (Outstanding!)

After the first bite, you won't know if it's the gooey cheese, hint of ranch, flavor of garlic or satisfying crunch that you're enjoying the most. Everything works so well together in this easy baked chicken recipe, with a two-cheese crust and crispy panko topping. 

Yes, it's the time of the year that many of us are starting weight loss plans, but sometimes you just need something cheesy for dinner. And this cheese-crusted lemon ranch chicken dinner recipe really delivers.

Ingredients

  • 4 boneless chicken breasts, pounded to about 1/2-inch thickness
  • 1 tablespoon olive oil

Marinade

Cheese Topping

  • 1 cup grated Parmesan cheese
  • 1 cup grated cheddar cheese, provolone, mozzarella or your favorite cheese (I used cheddar cheese)
  • 1/3 cup ranch salad dressing

Panko Topping

Here's how to make it: 

Combine all the marinade ingredients in a shallow baking dish.

Stir to combine then add the chicken breasts. Flip to coat completely. Marinate at least 30 minutes and up to overnight. (I marinated them about 1 hour.)

In a bowl, combine the cheese topping ingredients. Season with black pepper. Set aside.

In a smaller bowl, combine the melted butter and garlic powder. Stir to combine. Add the panko and stir to coat. Set aside.

Preheat the oven to 450 degrees F. Heat the olive oil in a skillet. Remove the chicken from the marinade and shake off excess. Put them into the hot oil and cook until browned on both sides and cooked through, about 5 to 6 minutes per side.

Put the cooked chicken breasts into a baking dish (I used the same one I marinated them in after washing it). Top with the cheese topping and then the panko topping.

Bake in the preheated oven until cheese has melted and panko is golden brown, about 5 to 8 minutes. Serve immediately.
