This scalloped cabbage recipe is ooey, gooey, cheesy goodness. With tender cabbage, a creamy white sauce and cheddar cheese, it's one vegetable side dish you won't be able to stop eating. This is one cheesy casserole recipe you'll want to make again and again!
To make this high-protein cabbage recipe you'll need a small head of fresh cabbage (check out nine impressive health benefits of cabbage), shredded cheese (white or yellow cheddar works great), butter, flour, whole milk and optional nutmeg.

Ingredients
- 1 small head cabbage, shredded
- 2 cups shredded white cheddar cheese or yellow cheddar cheese (or a combination)
- 1 tablespoon butter
White Sauce
Here's how to make it:
- Cook the cabbage in boiling, salted water until tender, about 15 minutes. Drain well and return to pot. Add the butter and season with salt and pepper. (To get thin cabbage slices, try using a mandoline slicer to cut the cabbage.)
- To make the white sauce, melt the butter in a saucepan over low heat. Whisk in the flour and cook, stirring, for 1 minute. Slowly pour in the milk, whisking, and cook until thickened. Season with salt and pepper. (For a gluten-free recipe, use gluten-free flour.)
- In an oiled casserole dish, makes layers with the cabbage, cheese and sauce, ending with the sauce. (If you're not a fan of cheddar, you could use gouda, gruyere or mozzarella instead.)
- Bake in a preheated 375-degree F oven for about 20 minutes. Sprinkle with cheese and bake about 5 minutes more.
