The ground beef is cooked with the onion and garlic before the cream of mushroom soup (adds creaminess), corn and chopped green chiles are stirred in. The beefy mixture is layered in a casserole dish with the chips, enchilada sauce and cheese. Bake until hot and bubbly. Done.

Ingredients

• 1 pound ground beef
• 1 onion, chopped
• 3 cloves garlic, minced
• 10 ounces (1 can) cream of mushroom soup
• 11 ounces (1 can) Mexican corn or whole kernel corn, drained
• 4 ounces (1 can) chopped green chiles
• 8 ounces tortilla chips
• 10 ounces (1 can) enchilada sauce
• 2 cups shredded Mexican cheese, cheddar cheese or your favorite cheese
• chopped green onions, for garnish (optional) 

Recipe Notes

• To spice it up, add some fresh jalapenos or crushed red pepper flakes.

• Instead of Mexican cheese blend, you can try this recipe with cheddar or another favorite cheese.

• Store leftovers in an airtight container in the refrigerator and reheat in the microwave.

Here's how to make it: 

1. Cook the ground beef and onion in a skillet until browned and cooked through, about 5 minutes. Add the garlic and cook about 30 seconds. Add the soup, corn and chopped green chiles. Mix well. Remove from the heat.
2. Spread half of the meat mixture on the bottom of a square baking dish. Top with half the chips, half the enchilada sauce and half the cheese. Repeat layers. 
3. Bake in a preheated 350-degree F oven for about 20 minutes. Garnish with chopped green onions, if desired.
