Loaded with ground beef, corn and cheese, this drool-worthy Mexican casserole recipe is sure to be requested over and over again. The prep for this flavorful high-protein casserole is simple, and so are the ingredients. Plus you get the health benefits of protein in every delicious bite.
The shopping list for this Mexican ground beef casserole is short and sweet: ground beef, onion, taco seasoning, garlic, high-fiber black beans (optional, but check out the health benefits of black beans and the health benefits of fiber), canned corn (read about the health benefits of corn), chopped green chiles, enchilada sauce, tortilla chips and cheese. The ground beef is cooked with the onion and garlic before the cream of mushroom soup (adds creaminess), corn and chopped green chiles are stirred in. The beefy mixture is layered in a casserole dish with the chips, enchilada sauce and cheese. Bake until hot and bubbly. Done.
This tasty ground beef casserole would be delicious with a dollop of sour cream or guacamole on top. To make it extra special, you could even add a can of drained black beans or pinto beans. Your mouth-watering Mexican dinner is ready in just about 30 minutes. So easy and delicious!

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 ounce (1 packet) taco seasoning
- 3 cloves garlic, minced
- 14 ounces (1 can) black beans, rinsed and drained (optional)
- 10 ounces (1 can) cream of mushroom soup
- 11 ounces (1 can) Mexican corn or whole kernel corn, drained
- 4 ounces (1 can) chopped green chiles
- 8 ounces tortilla chips (or corn chips)
- 10 ounces (1 can) enchilada sauce
- 2 cups shredded Mexican cheese, cheddar cheese or your favorite cheese
- chopped green onions, for garnish (optional)
Here's how to make it:
- Cook the ground beef, onion and taco seasoning in a skillet until browned and cooked through, about 5 minutes. Add the garlic and cook about 30 seconds. Add the soup, black beans, corn and chopped green chiles. Mix well. Remove from the heat. (To spice it up, add some fresh jalapenos or crushed red pepper flakes.)
- Spread half of the meat mixture on the bottom of a square baking dish. Top with half the chips, half the enchilada sauce and half the cheese. Repeat layers. (Instead of Mexican cheese blend, you can try this recipe with cheddar or another favorite cheese.)
- Bake in a preheated 350-degree F oven for about 20 minutes. Garnish with chopped green onions, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
