Ingredients
- 4 tablespoons butter
- 1 onion, finely chopped
- 4 tablespoons flour
- 2 cups beer (light beer works best)
- 1 1/2 cups heavy cream
- 2 cloves garlic, minced
- 1 1/2 cups grated cheddar
- 1 1/2 cups grated Swiss cheese
Here's how to make it:
- Melt the butter in a saucepan. Add the onions and cook until soft, about 3 minutes.
- Whisk in the flour and cook, stirring, about 2 minutes or until it starts to brown.
- Pour in the beer and whisk until smooth. Simmer gently about 5 minutes.
- Add the cream and garlic. Cook, stirring, until mixture thickens, about 8 to 10 minutes.
- Turn the heat off. Season with salt and pepper. Add the cheese and stir until melted and smooth.
