To make this creamy Amish pasta salad recipe at home you'll need elbow macaroni, Miracle Whip, dill pickles, yellow mustard, sugar, vinegar, hard-boiled eggs, onion and celery. The ingredients are all mixed up in a bowl and seasoned, to taste, with black pepper and sea salt. Cover the salad and let it chill out in the fridge until ready to serve.
If you can let this macaroni salad sit a while before serving, it helps the flavors blend. If not, it's still a winning pasta salad recipe. And don't overcook the pasta of you'll have mushy salad. Cook it to al dente.

Ingredients
- 2 cups uncooked elbow macaroni, cooked according to package directions
- 2 cups Miracle Whip
- 1 dill pickle, grated
- 3 tablespoons yellow mustard
- 1/3 cup granulated sugar
- 2 teaspoons white vinegar
- 2 - 3 hardboiled eggs, chopped
- 1/4 cup minced onion
- 2 stalks celery, chopped
Here's how to make it:
- Combine the Miracle Whip, grated pickle, mustard, sugar and vinegar. Whisk to combine. ( If you don't like sweet potato salad, use regular mayonnaise and reduce the amount of sugar.)
- In a large bowl, add the cooked macaroni, onion, eggs and celery.
- Pour in the dressing. Stir to combine. Season with salt and pepper. Refrigerate until ready to serve. Store the potato salad in an airtight container in the fridge.
