Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 1/2 cups almond milk
- 2 eggs
- 1/2 cup applesauce
- 1/3 cup almond butter
- 1 tablespoon honey
- 1 teaspoon vanilla
- 4 - 5 fresh figs, chopped
Here's how to make it:
- Combine the oats, baking powder and cinnamon in a bowl.
- In another bowl, combine the almond milk, eggs, applesauce, almond butter, honey and vanilla.
- Add the wet ingredients to the dry ingredients.
- Fold in the chopped figs. Let the mixture sit about 5 minutes.
- Pour the batter into an 8X8-inch baking pan that's been lightly oiled. Bake in a preheated 375-degree F oven for about 40 to 45 minutes or until the top is golden brown. Garnish with additional sliced figs, if desired.
