Fig Baked Oatmeal Recipe: You'll Dig This Dairy-free Fig & Almond Butter Baked Oatmeal Recipe

When pumpkin season starts, we often forget it's also fig season. With baked oatmeal all the craze, try this easy fig baked oatmeal recipe and give pumpkin a break ā€“ at least for one meal. But relax, we also have a baked pumpkin oatmeal recipe, too.

Ingredients

Here's how to make it:

  1. Combine the oats, baking powder and cinnamon in a bowl.
  2. In another bowl, combine the almond milk, eggs, applesauce, almond butter, honey and vanilla.
  3. Add the wet ingredients to the dry ingredients.
  4. Fold in the chopped figs. Let the mixture sit about 5 minutes.
  5. Pour the batter into an 8X8-inch baking pan that's been lightly oiled. Bake in a preheated 375-degree F oven for about 40 to 45 minutes or until the top is golden brown. Garnish with additional sliced figs, if desired.
