Pancakes and pastry are one of my favorite things to eat. Aebleskivers (pronounced eb-el-ski-ver, a-bla-ski-va, eb-el-sku-wyr, ebb-ull-skee-vers or able-skEEvers) are small Danish stuffed pancakes that are cooked on the stove in an aebleskiver pan. This European recipe has some history, too, which you know I love. The earliest aebleskiver pans are more than 300 years old and made from hammered copper!
"Aebleskivers are a type of pancake cooked in a special stovetop pan with half-spherical molds," according to Aebleskivers.com. "The center is soft and fluffy, almost creamy. The crust is crisp and browned. In Denmark, aebleskivers are traditionally plated in threes, dusted with powdered sugar, topped or filled with tart jams of Nordic berries and served with mellow Scandinavian coffee."
The Scandinavian pancakes "have typically not been served in restaurants or for breakfast, but rather at the family table for afternoon coffee breaks. On long and cold Nordic winter evenings, they are served with glögg. In the wintertime, aebleskivers are often sold by street vendors. A symbol of community and hospitality, they are very popular at Scandinavian charity and open-air events." Glogg is a Scandinavian alcoholic drink.

Ingredients
- 3 eggs, separated and at room temperature
- 2 cups buttermilk
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 teaspoon ground cinnamon
- powdered sugar, for dusting

- peeled and chopped peaches
- berries (chopped strawberries, raspberries, blueberries, blackberries, etc.)
- chocolate chips
- applesauce
- pastry cream
- fruit preserves or fruit jams
- lemon curd
Here's how to make it:
- Whisk together the egg yolks and buttermilk in a bowl. In another bowl, whisk together the flour, baking soda, salt and cinnamon. Add the dry ingredients to the wet ingredients.
- Beat the egg whites until stiff peaks form. Fold them gently into the batter.
- Heat a greased aebleskiver pan over medium heat. Add 1 tablespoon of batter to each hole. Put the desired filling on the top then cover with another tablespoon of batter.
- Cook until bubbles form and the bottom is golden. Flip them over and cook until the other side is golden. Dust with powdered sugar. Serve. Store the pancakes in an airtight container to keep them fresh.
