Best Chocolate Coconut Pancakes Recipe: This Decadent Pancake Recipe Is What to Make for Sunday Brunch by Dina Deleasa-Gonsar DishItGirl.com
Quick and easy, these chocolate coconut pancakes are a great breakfast treat that also make an elegant brunch. This easy pancake recipe has a light coconut undertone with rich chocolate goodness. They're so decadent, you may be tempted to make them for dessert, too (go ahead, we won't tell)!
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 10 to 12 pancakes
- 1 1/2 cups buttermilk pancake mix (I used Krusteaz buttermilk pancake mix)
- 1/2 cup cocoa powder
- 1 1/3 cups coconut water
- 1/2 cup shredded coconut
Here's how to make it:
- Heat a large nonstick pan or griddle over medium-high heat. Grease the pan slightly with a small amount of cooking spray or butter.
- In a large bowl mix together the pancake mix, cocoa powder and coconut water. The batter may be slightly lumpy and that is OK! Let the mix stand for about 2 minutes.
- Pour about 1/4 cups worth of pancake mix onto the pan. Let the pancakes cook until you see bubbles or what appears to be holes in the pancake, then you know it is ready to be flipped. Cook about 1 minutes on each side. Garnish with shredded coconut.
