Spana-whata? Spanakorizo is a Greek rice dish that's made with spinach, garlic, lemon and herbs. This Greek country dish can be eaten cold or hot and is on the table in about 30 minutes. Who doesn't need another rice recipe in their dinner arsenal? Rice side dishes go well with most proteins, are filling and most people enjoy rice.
To make this easy Greek spinach rice recipe you will need olive oil, onion, fresh garlic, fresh parsley, chives or green onions, baby spinach (check out the health benefits of spinach), basmati rice, vegetable or chicken broth, butter, lemons for juicing and zesting and optional feta cheese (feta could be the healthiest cheese in the world).
Serve this Greek rice side dish recipe with chicken, beef, lamb, pork or seafood. It's also a great vegetarian main dish.

Ingredients
- 2 tablespoons olive oil (try Greek olive oil)
- 1 onion, chopped
- 5 cloves garlic, minced
- 1/4 cup chopped chives or chopped green onion tops
- 4 tablespoons chopped fresh parsley
- 1 bag (5 ounces) baby spinach
- 1 cup basmati rice
- 2 cups low-sodium vegetable broth or chicken broth
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 1/2 tablespoon lemon zest
- feta cheese, for serving (optional)
Recipe Notes
- You could use brown rice if you prefer, but it will affect cooking time.
- If you're not a fan of feta cheese, you could use Parmesan instead.
- Store the rice in an airtight container in the fridge. Reheat in the microwave.
Here's how to make it:
- Heat the oil in a sauté pan over medium heat. Add the onion and cook until soft, about 5 minutes. Add the garlic, chives and parsley. Cook about 30 seconds, stirring.
- Add the spinach and cook until it wilts, about 2 minutes.
- Add the broth and rice. Season with salt and pepper. Bring to a boil, reduce heat, cover and cook until rice is tender, about 20 minutes.
- Add the butter, lemon juice and lemon zest. Stir to combine. Garnish with crumbled feta cheese, chopped parsley and lemon slices.
