The simple vinaigrette recipe is made with olive oil (buy good-quality olive oil for best results), lemon juice (fresh is always best), lemon zest, Dijon mustard and fresh minced garlic. The ingredients are whisked together, seasoned with salt and black pepper and it's ready to roll.

Ingredients
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1/2 teaspoon lemon zest
- 1 teaspoon Dijon mustard
- 2 cloves garlic, minced
Here's how to make it:
- Whisk together all ingredients. Season with salt and pepper. (If you want to add dried or fresh herbs, add them now. Other mustards could be substitute for the Dijon mustard like whole-grain mustard, Creole mustard or yellow mustard. )
- Pour into a salad dressing cruet. Refrigerate until ready to use. Store this homemade salad dressing or marinade in a salad dressing cruet or airtight container. This recipe can easily be doubled.
