Ingredients
- 24 ounces (1 bag) red new potatoes, sliced into quarters
- 2 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried sage
Here's how to make it:
- Preheat oven to 375 degrees F. In a large mixing bowl, combine all ingredients. Stir until potatoes are coated in the oil and herb mixture. Season to taste with salt and black pepper. (You could use any small potato for this recipe.)
- Spread into a 13x9-inch baking pan or onto a baking sheet. Bake for about 30 minutes, or until golden brown and crispy.
- Sprinkle with additional sea salt and pepper, if desired. Served plain or dip in your favorite dipping sauce. Store any leftovers in an airtight container in the fridge.
