This homemade lemon extract recipe can be used in so many ways and is really easy and inexpensive to make. The only thing required – besides lemon, vodka, a vegetable peeler and a jar – is a little patience. Lemon extract can be used in baked goods, salad dressings to add brightness, marinades or any recipe that you want just a little more lemony goodness. You can also clean with it!

Ingredients
- lemons
- vodka
Here's how to make it:
- Using a vegetable peeler, cut thin strips of peel off the lemon. Try to get as little pith (the white part) as you can. (I used 10 lemons.)
- Put the lemon peels into a jar, filling it 3/4 full. (I used an 8-ounce mason jar.)
- Add the vodka to cover.
- Seal the jar, shake, and place in a dark place (like your pantry) for four to six weeks. When the lemon extract is ready, strain it into a clean jar.
