Ingredients
- 1 cup sugar
- 3 cups water
- 3/4 cup cocoa powder
- 1 1/2 teaspoons vanilla
- dash of salt
Here's how to make it:
- Melt the sugar in a saucepan over medium heat. Start stirring when it begins to melt and continue until it begins to caramelize. Reduce the heat and pour in the water. Stir often until a dark caramel forms.
- Add the cocoa powder and dash of salt. Stir until smooth. Remove from the heat and allow the mixture to cool.
- Once cooled, stir in the vanilla. Put the mixture into the refrigerator to chill.
- When the mixture is cold, you can process it in an ice cream maker according to manufacturer's directions or pour into a square baking pan and freeze for at least 2 hours, stirring every 30 minutes.
