What is it about egg salad that makes it so comforting? This easy egg salad recipe has lemon juice in it (the secret ingredient), which really brightens it up. I love to add lemon juice to so many recipes, and this creamy egg salad confirms why. So good!
The high-protein egg salad recipe is made with hardboiled eggs, mayonnaise, Dijon mustard, lemon juice (secret ingredient), Worcestershire sauce, minced celery, minced green onions and fresh chopped Italian flat-leaf parsley. Ingredients
- 6 hardboiled eggs, peeled and chopped
- 1/4 cup mayonnaise (I use Hellmann's Real Mayonnaise)
- 2 - 3 teaspoons Dijon mustard
- 2 teaspoons freshly squeezed lemon juice
- 1/4 teaspoon Worcestershire sauce
- 1 stalk celery, minced fine
- 2 green onions, minced fine
- 1 tablespoon finely chopped flat-leaf Italian parsley leaves
Here's how to make it:
- Combine all the ingredients in a bowl. (For some heat, add a few shakes of crushed red pepper flakes. Fresh is always best when it comes to lemon juice. In a pinch, you could use bottled lemon juice.)
- Toss to combine. Season with salt and pepper. This recipe makes about four sandwiches. Store any leftovers in an airtight container in the fridge for up to three days.
