This is the perfect Mother's Day breakfast for Mom. Why? This spring asparagus and eggs recipe uses seasonal ingredients (asparagus) and is really easy for spouses and kids to make. This easy skillet egg scramble is the perfect way to start or end mom's day.
To make this high-fiber, high-protein recipe you will need just four simple ingredients and some water. Here is your short shopping list for this egg recipe: fresh asparagus (check out the health benefits of asparagus), olive oil, high-protein eggs and fresh garlic. Serve this asparagus egg scramble for breakfast, brunch or lunch, or as breakfast for dinner.
Recipe Variation: If mom prefers fried eggs or poached eggs, prepare the asparagus and lay it on a serving plate. Fry or poach the eggs, then present them on top of the asparagus. Mmm.

Ingredients
- 1 bunch asparagus, ends trimmed and cut into pieces (about 10 to 14 stalks)
- 1/4 cup water
- 1 tablespoon olive oil
- 3 eggs
- 1 clove garlic, minced
Here's how to make it:
- In a skillet, bring the water to a boil. Add the asparagus and cook until crisp-tender, about 4 minutes. Remove to a plate and wipe the skillet dry. If you like your asparagus more tender, cook it a couple minutes longer.
- Beat the eggs in a bowl. Season with salt and pepper. Set aside. Fresh ground black pepper is wonderful in this recipe.
- Add the olive oil to the pan. Add the asparagus and garlic and cook about 1 minute. Season with salt and pepper. (If you like cheese, stir in some cubes of your favorite. We like gruyere, Swiss, mozzarella and fontina. You can also add more garlic. Sometimes I'll add onion, too.)
- Pour in the eggs and stir to combine, then cook without stirring until eggs are desired doneness. Store any leftover eggs in an airtight container in the fridge.
