Recipe Notes

  • Instead of cheddar cheese, try gruyere, Swiss, Monterey Jack, Colby Jack, pepper-jack or your favorite cheese.
  • For a healthier casserole, use turkey bacon.
  • You could add some chopped green onion, red onion, fresh herbs or vegetables to add more crunch and freshness.

Here's how to make it:

  1. Combine the potatoes, bacon or sausage and 1 cup cheese in a bowl. Season with salt and pepper. Pour into a greased 13x9-inch baking dish.
  2. Stir together the eggs and milk in a bowl. Season with salt and pepper. Pour the mixture over the hash browns.
  3. Bake in a preheated 350-degree F oven for about 40 minutes. Top with the remaining 1 cup of cheese and bake about 5 minutes more.
