Eggs. Bacon. Sausage. Potatoes. Oh, my. Print this easy brunch recipe out and get it on your Mother's Day or Father's Day breakfast or brunch plans ASAP. The breakfast or brunch casserole recipe looks really impressive, but is simple to make. Mom would love this hearty breakfast on Mother's Day.
The one-pan breakfast casserole recipe is made with russet potatoes, eggs (read about the health benefits of eggs), fresh garlic cloves, onion, shredded Italian cheese, chopped green onions, Italian sausage, red bell pepper, fresh parsley and bacon. Wow, right? All the ingredients cook in one pan and in about 15 minutes.
Variation: Instead of bacon, try crisp prosciutto cubes in this high-protein recipe.
Serve this hearty breakfast recipe with a side dish of fresh fruit, coffee, orange juice or a mimosa. (We think mom wants a mimosa, for sure!)

Total Time: 30 minutes
Servings: 8
Ingredients
- olive oil
- 5 medium russet potatoes, chopped
- 8 eggs
- 2 cloves garlic, sliced
- 1 small onion, chopped
- 8 ounces Italian cheese, shredded
- 3 green onions, chopped
- 12 - 16 ounces (1 package) Italian sausage, cooked and crumbled
- 1 red pepper, chopped
- 1 bunch fresh parsley or cilantro
- 12 - 16 ounces (1 package) bacon, cooked crisp
Here's how to make it:
- Heat some olive oil in a skillet. Add the potatoes and cook for about 7 minutes on each side until golden brown.
- Add the cooked sausage on top of the potatoes. Next add the red pepper, scallions and garlic on top of the sausage and a handful of cheese. (You could use all bacon or all sausage.)
- Crack the eggs into a bowl, then pour them over the top of the potatoes. Season with salt and pepper, to taste. (For a little spice, add some crushed red pepper flakes.)
- Once the eggs are cooked through, add the chopped parsley or cilantro.
- Remove the skillet from the heat. Slide or spatula out of skillet and onto a cutting board. Top with the cooked bacon and serve.
