Trying to expand my cooking skills, I decided to make tikka masala for dinner. Chicken tikka masala is a dish from India that is loaded with tender chicken in a creamy curry sauce. Most people think the chicken recipe originated in India, but after researching it I found that it probably originated in Scotland. Tikka masala is considered by some to be the national dish of the United Kingdom. So interesting!
To make this creamy one-pan chicken tikka masala recipe you will need the following ingredients: olive oil, boneless/skinless chicken thighs, an onion, tomato paste, fresh garlic, fresh ginger, garam masala, chili powder, ground turmeric, tomato sauce, chicken broth and heavy cream. Serve this easy chicken tikka masala for dinner over rice. We like brown rice, but jasmine, basmati or white rice would work, too. You could even serve it ladled over quinoa or your favorite grain.

Ingredients
- 1 tablespoon olive oil
- 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
- 1 onion, chopped
- 3 tablespoons tomato paste
- 4 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 2 teaspoons garam masala
- 1 1/2 teaspoons chili powder
- 1 1/2 teaspoons ground turmeric
- 15 ounces (1 can) tomato sauce
- 1 cup chicken broth
- 1/2 cup heavy cream
Here's how to make it:
- Heat the oil in a large soup pot. Season the chicken with salt and pepper. Add the chicken and onions to the hot oil and cook until chicken is browned and cooked through, about 5 minutes. You could use boneless chicken breasts instead of thighs.
- Add the tomato paste, garlic, ginger and spices. Cook another 30 seconds.
- Add the tomato sauce and chicken broth. Bring to a boil, reduce heat and simmer until sauce begins to thicken, about 8 to 10 minutes.
- Pour in the heavy cream and heat through.
- Serve with chopped fresh cilantro leaves, for garnish, on top of rice, if desired. Store the leftovers in an airtight container in the fridge and reheat in the microwave.
