Zucchini & Pasta Recipe: This Easy Zucchini Pasta Stuff Is Pretty Darn Good & Kids Love It

Years ago, faced with just a few ingredients to work with, my food creativity kicked in. Grated zucchini was quickly cooked with garlic and tossed with noodles, olive oil and some grated Parmesan cheese. From that night on, "that zucchini pasta stuff" was requested often by my kids. Go, me.

You'll need:

Here's how to make it:

Cook the pasta according to package directions. Set aside.

Heat the olive oil in a skillet. Add the grated zucchini and garlic. Cook about 3-5 minutes. Season with salt and pepper, to taste.

Add the cooked pasta and Parmesan cheese. Mix well. Serve with additional grated Parmesan cheese.
