To make this gluten-free cilantro lime rice recipe, you will need just a few simple ingredients. Here's your short shopping list: white rice, olive oil, chicken broth, fresh cilantro, limes for juicing (fresh is best), garlic and salt. The cilantro is blended with the lime juice, garlic and a little water until pourable. Pour it over the cooked rice and it's ready to be serve. Delicious!

Ingredients
- 1 teaspoon olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 small bunch cilantro, chopped (about 1/2 cup)
- 2 tablespoons fresh lime juice
- 2 cloves garlic
- 1/2 teaspoon salt (or to taste)
- 1 – 2 tablespoons water
Here’s how to make it:
- Heat the olive oil in a pot. Add the rice and cook, stirring, until it gets light brown.
- Add the chicken stock and salt. Bring to a boil, reduce heat, cover and cook until rice is just tender.
- To a blender, add almost all of the cilantro (save a little for garnish), lime juice, garlic and water. Blend. Season with salt and pepper, to taste. Add more water if it’s too thick. (Change things up by making this recipe with lemon juice instead of lime juice and parsley instead of cilantro.)
- Pour cilantro mixture into the rice. Mix well. Taste and add more salt and pepper, if needed. Garnish with additional cilantro and lime wedges. Store any leftover rice in an airtight food container in the refrigerator. Make a double batch of this cilantro lime rice and freeze for later.
