Roasted Golden Beets Recipe With Potatoes Is Healthy & Delicious

Beets are a nutritional bomb! Here's an easy beet recipe I created using golden beets. This past month I made about three or four variations of the recipe, each time substituting one vegetable for another. I encourage you to experiment at home until you discover your favorite combination. (Find out why beets are the nutritional bomb.)

To make these healthy gluten-free roasted beets you will need olive oil, golden beets, sweet potatoes, russet potatoes, a leek, water, oregano (fresh or dried), salt and black pepper. The beets and potatoes bake up in the oven in about one hour.

Serve these healthy beets as a nutritious side dish with your dinner or as a tasty vegetarian main dish.

  • 1/2 cup extra virgin olive oil 
  • 3 - 4 golden beets, sliced 
  • 2 - 3 sweet potatoes, cut in quarters 
  • 2 - 3 russet potatoes, cut in quarters 
  • 1/2 leek, finely sliced 
  • 1/2 cup water 
  • 1 teaspoon oregano, ground or fresh

  • If you can't find golden beets, us regular red beets. Wear gloves because red beets can stain your hands.
  • Experiment with different fresh and dried herbs.
  • Try Yukon gold potatoes instead of russet potatoes.

Here's how to make it:

  1. In a baking dish, add all ingredients, pouring oil and spices on top.
  2. Add water and mix all ingredients gently.
  3. Bake, uncovered, at 400 degrees F for 1 hour. Toss halfway through the cooking.
