Fall-Off-the-Bone Slow-Cooker Roasted Chicken Recipe Is Budget Friendly by April Wolff-Bowers

I recently bought a few halved and quartered organic, free-range chickens from my friend's farm. This was an affordable way to stock up our freezer for cooler-weather meals. Last night I made a 5 1/2-pound chicken in my slow cooker and it was literally falling off the bone.
We had the most tender and juicy slow-cooked chicken ever, with plenty of leftovers for chicken salad, tacos, main dish salads or soup later in the week. The high-protein dinner was so easy and affordable. The perfect budget recipe that I will make over and over again, plus we got the health benefits of protein.
To make this slow-cooker chicken recipe you will need a chicken and whatever herbs and spices you want to use. The whole chicken cooks in the slow cooker until cooked through. My chicken was large (5 1/2 pounds!), so it took about six hours. Smaller chicken will cook in 3 1/2 to 5 hours. Chicken is cooked through at 165 degrees F internal temperature on a food thermometer. Simply insert it into the thickest part of the chicken breast, avoiding the bone, to get an accurate temperature.
Serve this inexpensive high-protein, slow-roasted chicken for dinner with your favorite side dishes. Then get creative with how to use the leftover chicken. Shred and store the cooked shredded or chopped chicken in food storage bags or airtight containers in the refrigerator.

Ingredients
- whole chicken, thawed if frozen
- your favorite herbs and spices
Here's how you make it:
- Rinse the chicken under cold water. Pat dry. Place in the slow cooker.
- Sprinkle with your desired seasonings. (Think garlic powder, onion powder, smoked paprika, cumin, seasoning blends, thyme, rosemary, sage. The possibilities are endless! You could even use taco seasoning.)
- Cook for about 3 1/2 to 6 hours on low. (Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.) Use as desired. Store the chicken in an airtight container in the fridge.
