Fun "Carrot" Toast Recipe With Cream Cheese & Broccoli Is a Healthy Addition to Your Easter Menu by Donna John

Parents will do anything to get kids to eat more vegetables. What kid wouldn't want to munch on one of these "carrots?" Easy carrot toasts are not only healthy, they make a fun addition to your Easter table or spring parties and are a nutritious snack anytime.
Don't have broccoli? Any green vegetable will work. Try minced zucchini, spinach, kale or even peas. And if your child doesn't like toasted bread, skip that step.
