"Carrot" Toast: A Healthy & Kid-friendly Addition to Your Easter Menu by Donna John
Parents will do anything to get kids to eat more veggies, and what kid wouldn't want to munch on one of these "carrots?" Easy carrot toasts are not only healthy, they make a fun addition to your Easter table or spring parties and are a nutritious snack anytime.
- whole-grain bread
- cream cheese
- broccoli florets, chopped fine
- carrots, shredded
Here's how to make them:
- Toast the bread.
- With a sharp knife, cut the bread to look like a carrot (see image).
- Spread the bread with cream cheese.
- Add the shredded carrot and broccoli florets to create the carrot. Serve!
Don't have broccoli? Any green vegetable will work. Try minced zucchini, spinach, kale or even peas. And if your child doesn't like toasted bread, skip that step.
