To make these moist savory muffins you will need fresh spinach, eggs, Greek yogurt, olive oil, heavy cream, cheddar cheese (or your favorite cheese), flour, baking powder and a dash of salt. The garlic powder is optional. The ingredients are mixed together and baked until golden, about 18 minutes. So quick and easy!

You also can just grab one as a quick Mediterranean-inspired snack anytime you feel like one. - 2 cups chopped fresh spinach, washed and dried well
- 2 eggs
- 1/3 cup Greek yogurt
- 1/3 cup olive oil
- 1/2 cup heavy cream

- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder

Recipe Notes
- You could use sour cream instead of Greek yogurt.
- For more Mediterranean flavor, add in the garlic powder.
- You could substitute your favorite cheese for the cheddar. Gouda, feta, white cheddar, gruyere, mozzarella, Swiss and provolone would all be good substitutes.
- Store muffins in an airtight container in the refrigerator.
Here's how to make it:
- Combine the eggs, Greek yogurt, olive oil, cream and garlic powder, if using, in a large mixing bowl. Whisk to combine.
- In another mixing bowl, combine the flour, baking powder and salt. Stir to combine.
- Add the dry ingredients and grated cheese to the wet ingredients.
- Stir in the spinach.
- Fill muffin tins with the batter. Sprinkle the top of the muffins with a little more cheese, if desired. Bake in a preheated 350-degree F oven for about 15 to 18 minutes, or until golden brown.
