Instead of butter, use roasted garlic as a condiment, a healthy appetizer spread, or add it to mashed potatoes, pasta or dressings. It’s so easy to make, and can be kept in the refrigerator for up to two weeks.

Cuisine: Mediterranean
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour, 10 minutes

Ingredients

  • 1 whole fresh garlic
  • 2 to 3 tablespoons olive oil (more or less as needed)

Here’s how you make it:

  1. Preheat oven to 400 degrees F.
  2. Peel away the papery outer layer of the garlic.
  3. Cut off the top one-third of the garlic.
  4. Drizzle olive oil over the garlic until completely covered.
  5. Roast upright in a covered dish for 1 hour.

Squeeze the roasted cloves of garlic on bread or use as an ingredient in your favorite dishes.
