Boursin is that creamy herb cheese spread made from a blend of garlic, parsley and chives folded into Gournay cheese. Boursin was created by François Boursin, a young French cheesemaker who worked for two years on his recipe inspired by fromage frais, a traditional French cheese dish that blends garlic, fresh cream, soft cheese, herbs, salt and pepper. In 1963, François introduced his mouth-watering cheese to the world and it's since become famous for its irresistible flavor. Boursin is a versatile cheese delicious on its own or in a variety of recipes featuring Boursin cheese.
To make this tasty one-pan dinner, here are the gluten-free ingredients you'll need to gather: extra virgin olive oil, onions, green bell peppers, mushrooms, ground chicken, fresh spinach, Boursin cheese and cottage cheese. The cheddar cheese topping is optional. You combine everything in the skillet on the stovetop then bake it until it's a sizzling golden brown. Yummy!
This savory one-pan meal is perfect on its own for dinner, but you also could serve it over fresh pasta or your favorite grain. I served it over rice with a fresh parsley garnish. Easy, nutritious and delicious.

Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 1 cup onions, diced
- 1 cup green bell peppers, diced (or your favorite bell pepper)
- 8 ounces baby bella cremini mushrooms, sliced
- 1 pound ground chicken
- 5 ounces fresh baby spinach
- 5.2 ounces (1 package) Boursin garlic and herb cheese

Here's how to make it:
- In a cast iron skillet over medium heat, add the olive oil, onions, peppers and mushrooms. Stir to combine. Add the ground chicken. Break it up and sauté with the vegetables until it's browned and cooked through. (I used green bell peppers, but you can use any color bell peppers you prefer.)
- Add the spinach and stir until wilted and combined. Remove from heat and drain any excess liquid.
- Add the Boursin and the cottage cheese. Season with salt and black pepper, to taste, if desired. Stir until melted and combined.
- Top with the cheddar cheese, if using.
- Bake in an oven that's been preheated to 400 degrees F for 15 to 20 minutes, or until cooked through and a sizzling golden brown.
- Remove from oven and allow to cool for a few minutes before serving. Garnish with fresh parsley, if desired.
