I am baking this dish as I write so I can't comment as to taste. The recipe is very easy to put together. Two questions: what are some good sides? Can I freeze this casserole?

Hi Sara Campbell ! So glad you're baking up this easy casserole. I served it with mashed potatoes and roasted vegetables, but it would be equally delicious over rice or your favorite pasta and a side of veggies or a fresh salad. Very versatile! As far as freezing, I didn't freeze it because it disappeared quickly (haha), so I'm not exactly sure. But my guess is that it would freeze fine (though fresh is always best). I hope you enjoy it!

Update: I tasted the casserole after I took it out of the oven. Delicious! I was skeptical after reading the recipe. I like all of the ingredients individually. I just wasn't sure they would work together. I made some pasta as Elisa suggested. Mmmm, can't wait for dinner. Thank you, Elisa, for your fast response

It was really good!! I subbed onion for olives and I think artichoke hearts would be a great addition. Topped with fresh diced tomato.

I sliced up the leftovers and added a little cream for a skillet dinner served over quinoa! Just as tasty! 😁
