I was inspired to make this easy pasta casserole recipe after seeing my friend Donna's recipe for a dump-and-bake Boursin pasta casserole recipe with zucchini and Italian sausage. It made my stomach growl! Donna and I have a way of being inspired by each other's recipes, but then tweaking them to suit our own tastes. I call this phenomenon, "What the heck did she do to my recipe?!" So, we'll see what she thinks of this version of her creamy delicious Boursin casserole.

Boursin is a savory herb cheese spread that's a blend of garlic, parsley and chives folded into Gournay cheese. Boursin was created by a young French cheesemaker named François Boursin. Young François worked for two years on his recipe inspired by fromage frais, a traditional French cheese dish that blends garlic, fresh cream, soft cheese and herbs. Boursin cheese was introduced to the world in 1963 and has been enhancing appetizers and main meals ever since. This creamy delicious cheese works wonders in dump-and-bake casseroles like this one.

The flavorful one-pan recipe has minimal prep before you bake it up into some serious comfort food. With just seven ingredients and using a single baking pan, it's a simple dinner you'll want to keep in your recipe rotation. To make the rich and tasty casserole, here are the nourishing ingredients you'll need to gather: short pasta (regular or gluten-free pasta), Boursin cheese, bell pepper (learn about the health benefits of bell peppers), fresh spinach (read about the health benefits of spinach), diced tomatoes, milk and chicken sausage. Simply layer all the ingredients in a baking dish, cover and bake it until cooked through and bubbling.

Ingredients

• 12 ounces short pasta, uncooked (regular or gluten-free pasta)
• 5.2 ounces (1 package) Boursin cheese (garlic and herb flavor)
• 1 cup bell pepper, diced (I used orange)
• 5 ounces fresh spinach, chopped
• 29 ounces (2 cans) diced tomatoes, with liquid
• 14.5 ounces (1 tomato can) milk (I used 2 percent)
• 12 ounces (4 sausages) pre-cooked chicken sausage, diced
• fresh basil, optional garnish

Here's how to make it:

1. Spread the pasta onto the bottom of a 13x9-inch baking pan or casserole dish. Place the Boursin in the center of the pasta. (To make this recipe gluten-free, use gluten-free pasta.)
   
2. Spread the bell peppers evenly over the pasta, then layer the spinach on top of the peppers. (I used an orange bell pepper, but you could use any color bell pepper you prefer.)
   
3. Spread the tomatoes with their liquid evenly over the spinach, then pour the milk over the tomatoes.
   
4. Spread the chicken sausage evenly over the top of the casserole. (Instead of chicken sausage, you could use cooked chicken breast or cooked ground chicken.)
   
5. Cover the baking dish with aluminum foil and seal it tightly, so no steam escapes, then bake in an oven that's been preheated to 400 degrees F for about 30 minutes. After 30 minutes, remove from oven and uncover the casserole. Stir the pasta, vegetables and sausage, leaving the Boursin mostly intact.
   
6. Return casserole to the oven, uncovered, and bake until pasta is tender, about 15 minutes.
   
7. Stir the Boursin into the other ingredients, creating a rich and creamy sauce.
   
8. Scoop into bowls and serve. Garnish with fresh basil or grated Parmesan cheese, if you like.
   
9. Store any leftover casserole in an airtight container in the refrigerator and reheat in the microwave.
