I’m so grateful to have access to my summer farmers market and the amazing produce that is available to us. As I wandered around this past weekend I spotted beautiful broccolini that I was just sure would be fantastic in this roasted broccolini recipe with lemon and Parmesan cheese.
I love the tanginess of the lemon combined with the crisp taste of roasted garlic and Parmesan in this high-protein vegetable side dish recipe. This roasted broccolini is ready in just 25 minutes and is the perfect side dish to just about any kind of protein.
Variation: This vegetable recipe can also be made with broccoli if that is what you have on hand. So don’t let lack of broccolini stop you from enjoying this wonderful vegetarian side dish with your dinner!

Ingredients
- 1 1/2 lemons
- 4 - 6 garlic cloves, smashed
- 2 bunches broccolini, ends trimmed (or 1 pound broccoli, thinly sliced lengthwise, stems included)
- 3 - 4 tablespoons olive oil
- 1/2 cup Parmesan cheese, finely grated
Here's how to make it:
- Thinly slice one lemon into rounds and set the other half to the side. Smash the garlic.
- Line a large baking sheet with with parchment paper. Place the smashed garlic, lemon slices, broccolini and a good pinch of salt on the baking sheet. Drizzle the olive oil over the top and toss with salad tongs or clean hands to make sure the oil coats the tops of the broccolini and all the other ingredients.
- Sprinkle with grated Parmesan. Bake in a preheated 425-degree F oven for 15 minutes. Remove when the broccoli and cheese are nice and brown.
- Serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
