You can't beat a good piece of barbecue chicken. On an outdoor grill or in a smoker, barbecue chicken takes a while to cook, but if you let your oven do all the work, BBQ chicken can be a delicious weeknight family dinner. This baked chicken recipe with southern peach bourbon barbecue sauce is juicy, sweet, tangy and oh, so delicious.
You only need simple pantry ingredients to make this high-protein chicken dinner. Here are the gluten-free ingredients to grab from your fridge and pantry: bone-in chicken pieces (whatever you like, I used drumsticks), ketchup, brown sugar, bourbon, peach preserves, apple cider vinegar, Worcestershire sauce, mustard powder and Liquid Smoke (Liquid Smoke is naturally gluten-free).
The simple southern barbecue sauce is heated on the stovetop for a few minutes so the sugar and peach preserves can melt into the other ingredients. Pour the sweet and tangy homemade barbecue sauce over the chicken and bake until done.
This juicy baked chicken is delicious served with your favorite side dishes as a high-protein dinner. We loved the peach bourbon barbecue sauce so much that I've made the sauce on its own for dipping other barbecued and grilled meats into.
Cuisine: American / Southern
Prep Time: 5 minutes
Cook Time: 35 to 40 minutes
Total Time: 40 to 45 minutes
Servings: 4
Ingredients
- 4 - 6 bone-in chicken pieces (I used drumsticks)
Peach Bourbon Barbecue Sauce
- 1/2 cup ketchup
- 1/4 cup brown sugar, packed
- 1/4 cup bourbon
- 1/4 cup peach preserves
- 2 tablespoons apple cider vinegar
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon mustard powder
- 1/4 teaspoon Liquid Smoke
Here's how to make it:
- Put all the barbecue sauce ingredients into a small saucepot. Bring to a simmer, reduce heat and gently simmer for 2 to 3 minutes. Turn off the heat and set aside. (Taste and see if you want more of any ingredient to make it more vinegary, sweeter, etc.)
- Pat the chicken dry with a paper towel. Season with salt and black pepper. Place in a baking dish.
- Pour the barbecue sauce over the chicken to coat.
- Bake in a preheated 375-degree F oven until chicken is cooked through, about 35 to 40 minutes, depending on the chicken parts used and size. Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.
- Serve the chicken with more of the barbecue sauce spooned over the top. Store any leftovers in an airtight container in the fridge.
