This high-protein banana bread recipe is the treat you didn't know you needed. The protein comes from eggs, cottage cheese and almond flour, which I've recently rediscovered as one of my favorite healthier ingredients. Slightly sweet with a subtle nutty flavor, almond flour is a good source of plant-based protein and nutrients, along with the other health benefits of almond flour. And when you use almond flour in banana bread, the loaf turns out soft, moist and absolutely irresistible.
This rich almond flour banana bread recipe has a light and lovely crumb, with just a touch of sweet almond flavor. Almond flour is a source of fiber that is naturally gluten-free. To make this easy banana bread recipe, you'll need just one bowl (woohoo!) and these eight gluten-free ingredients: overripe bananas, eggs, cottage cheese, pure maple syrup, vanilla extract, almond flour, baking soda and ground cinnamon. The chocolate chips and chopped walnuts are optional. You mix up the batter then bake the loaf until cooked through and golden. So simple and comforting!

Ingredients
- 2 medium overripe bananas, mashed
- 3 large eggs
- 1/2 cup cottage cheese
- 1/4 cup pure maple syrup
- 2 teaspoons pure vanilla extract
- 2 1/2 cups fine almond flour
- 1 1/2 teaspoons baking soda
- 1 3/4 teaspoons ground cinnamon
- 1/2 cup semisweet chocolate chips (optional)
- 1/2 cup chopped walnuts (optional)
Here's how to make it:
- In a large mixing bowl, add the mashed bananas, eggs, cottage cheese, maple syrup and vanilla. Whisk to combine.
- Add the almond flour, baking soda and cinnamon. Stir to combine.
- Fold in the chocolate chips and/or the walnuts, if using. (I used semisweet chocolate chips, but you could use milk or dark chocolate, if preferred. You could use chopped pecans instead of walnuts.)
- Spread the batter into a loaf pan that's been lined with parchment paper.
- Bake in an oven that's been preheated to 350 degrees F until cooked through and golden brown, about 40 to 50 minutes (a toothpick should come out clean). If loaf is getting too brown on top, cover with aluminum foil.
- Remove and allow loaf to cool a bit before removing to a wire rack to cool completely before slicing and serving.
- Store leftovers in an airtight container in the refrigerator or freezer. Reheat in the microwave.
