To make this tasty one-pan recipe, here are the gluten-free ingredients you'll need to gather: extra virgin olive oil, fresh broccoli, bell pepper (I used yellow, but you can use your favorite color bell pepper), ground chicken, onion powder, cream cheese (or mascarpone cheese), fresh basil and shredded cheddar cheese. You combine everything in the skillet on the stovetop then bake it until it's golden brown and sizzling.
You can serve this simple high-protein skillet casserole for dinner all on its own, or over rice, pasta or potatoes. You could roll it up in tortillas or even scoop it onto baked potatoes. So many ways to enjoy this easy, nutritious and delicious dinner!

Ingredients
- 2 tablespoons extra virgin olive oil
- 3 cups broccoli, chopped
- 1 cup yellow bell pepper, chopped (or your favorite color bell pepper)
- 1 pound ground chicken (or ground turkey)
- 1 teaspoon onion powder
- 8 ounces cream cheese (or mascarpone cheese)
- 1/4 cup fresh basil leaves
- 2 cups cheddar cheese, shredded (divided)
- additional fresh basil, for garnish (optional)
- salt and black pepper, to taste (optional, but I used about 1/2 teaspoon of each)
Here's how to make it:
- In a cast iron or oven-proof skillet over medium heat, add the olive oil, broccoli and peppers. Stir to combine.
- Add the ground chicken. Break it up and sauté with the vegetables until it's browned and cooked through. Remove from heat.
- Add the onion powder, cream cheese and half of the cheddar. Season with salt and pepper, to taste, if desired. Stir to combine, ensuring that it's smooth on top.
- Spread the basil leaves across the top of the casserole, ensuring that they're evenly distributed.
- Top with the remaining shredded cheddar cheese.
- Bake in an oven that's been preheated to 425 degrees F until cooked through, golden brown and sizzling, about 15 to 20 minutes.
- Allow to cool a bit before serving. Garnish with additional fresh basil, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
