"I kept the ingredients really simple here because I was using up a bunch of things I had already at home (and it turned out so good) but keep in mind everything is interchangeable here," says Rachel.
Here is your shopping list for this budget-friendly, gluten-free recipe: lean ground beef, tomato sauce, corn (check out the health benefits of corn), black beans (read about the health benefits of black beans), green chiles, dried onion, ground cumin, garlic powder, dried oregano, tortillas (gluten-free preferred but use your favorite) and cheese.

Ingredients
- 1 1/2 pounds extra-lean ground beef (or bison)
- 16 ounces (2 cans) no-salt-added tomato sauce
- 1 cup frozen organic corn
- 15 ounces (1 can) black beans, rinsed and drained
- 4 ounces chopped fresh green chilies (or jarred or canned chopped green chiles)
- 2 teaspoons dried minced onion
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 6 sprouted wheat or gluten-free tortillas (Rachel loves Siete or Ezekiel brand)
- 1 cup freshly shredded cheddar cheese
Here's how to make it:
- In a large skillet, cook your ground meat over medium heat until no longer pink. Drain excess grease.
- Stir in the tomato sauce, beans, corn, chopped chilies, onion, cumin, garlic powder and oregano. Heat through.
- In an 11x7 or 13x9-inch baking dish coated lightly with avocado oil or cooking spray, layer half of the tortillas on the bottom, then evenly cover with half your beef mixture and cheese. Repeat layers.
- Bake, uncovered, at 350 degrees F for 25 to 30 minutes, or until hot and bubbly. Serve. Store any leftovers covered in the fridge and reheat in the microwave.
