Ingredients
- 2 small overripe bananas, mashed
- 3/4 cup peanut butter (creamy or crunchy)
- 3/4 cup chocolate protein powder
- 1/3 cup semisweet chocolate chips
- 1/3 cup chopped pecans (optional)
Here’s how to make it:
- In a large mixing bowl, add the mashed bananas.
- Add the peanut butter and protein powder. Stir to combine and form a dough. (You can use creamy or crunchy peanut butter. To be sure these cookies are gluten-free, use gluten-free protein powder.)
- Fold in the chocolate chips, and the pecans, if using. (You also could use your clean hands to combine it all.)
- Form the dough into 12 balls then place them on a baking sheet that’s been lined with parchment paper. Gently press down on the cookies to flatten and shape them. (These cookies do not spread as they bake. The number of cookies depends upon the size of balls that you form.)
- Bake in an oven that’s been preheated to 350 degrees F until lightly golden, about 10 minutes.
- Allow cookies to cool a bit before removing them to a wire rack to cool completely. Store leftover cookies in an airtight container.
