When my husband asks me to grab him some protein bars at the grocery store, I end up just staring at them, reluctant to put them into my basket because they're so darn expensive. When I saw his tub of vanilla protein powder sitting in the pantry, I started searching for ways to make homemade, budget-friendly protein bars. This sweet high-protein cookie recipe is what I came up with. (Read about the health benefits of protein.)
You only need four ingredients to make this high-protein recipe. Here is your short shopping list: peanut butter, brown sugar, an egg and vanilla protein powder. This one-bowl cookie recipe bakes up in about 12 minutes.
If you want a gluten-free protein cookie, make sure your protein powder is gluten-free. Not all are free of gluten. You could also use a brown sugar substitute. Add optional vanilla extract if you want more vanilla flavor. If you want a more decadent cookie, add the chocolate chips.
This high-protein cookie is the perfect snack if you're trying to increase your protein intake and get the health benefits of protein. The protein cookie is sweet enough to even be served for dessert or as a quick grab-and-go breakfast option.

Ingredients
- 1 cup peanut butter
- 2/3 cup brown sugar
- 1 egg
- 1/2 cup vanilla protein powder
Optional Ingredients
- 1/4 cup chocolate chips
- 1/2 teaspoon vanilla extract
Here's how to make it:
- Combine all the ingredients in a mixing bowl. If using vanilla extract and chocolate chips, add them, too.
- Stir to combine.
- Form into 12 balls and place on a parchment paper-lined baking sheet.
- Press the cookies to form a cookie shape. I used a rubber spatula.
- Bake in a preheated 350-degree F oven for about 12 to 13 minutes, or until the edges just begin to lightly brown. Remove and cool completely.
- Store the cookies in an airtight container to keep them fresh.
